On Saturday I made a crock pot meal, a roast with potatoes, carrots and celery. While this isn't Andy's favorite meal, it's a meal at home and I needed to use the beef in the freezer!
Our neighbors wanted to barbecue with their new grill they got for Christmas and Andy was off the hook in eating the crock pot meal. He did say he didn't want to waste the meal, but I had other plans for the Roast. My mom has this recipe for a homemade Vegetable Beef Soup, so food does not go to waste and I get to enjoy one of my favorite soups!! Yay for warm soup on these cold winter days!!!
Ingredients
Leftover from a crock pot meal of beef, potato, carrots and celery
Frozen mixed vegetables
1 can of tomato soup
1 can of tomato sauce
1 tsp. salt
1/3 tsp. pepper
1/3 tsp celery powder
1/2 onion
1 tsp. garlic
4 cups of water
Heat soup to desired temperature and it is ready to eat.
I will normally cook it at a slow rate so that the flavors all seep together! I also added some more celery to my soup that I cut up and put in there. The celery isn't all the way cooked, so there is some crunch to it. I would normally eat this soup with some saltine crackers, but i'm really trying hard to watch what I eat, so no crackers with my soup. Since I knew I was going out of town, I put 2 big batches in the freezer for a later date. I would say those 2 big batches would make about 4-6 more meals for me! Score!
