Today is a new day

I don't know about you all, however; I was having a rough day.  I don't know if it was because it was rainy and gloomy or what, but man I was a CRAB!  Even my husband was stepping away to let me keep my sanity.  

I don't know what it is, but I swear people cannot drive.  We learn very early on in life, that we wait our turn.  In grade school we lined up and waited our turn.  In middle school we wait our turn in the cafeteria, not just walk up in front of someone and get your food before them. Lately, people driving just don't care.  I pride myself in the last 13 years of driving that I have never gotten into a car accident (knock on wood).  However, that is because I am a very aware driver.  I keep my eyes on the road, remember what cars are around me, look in my mirrors, yield to other drivers, merge into traffic when there is an opening, and not cut people off.  

Yesterday, while driving home from work, the 2 lane road I was driving in merged into one lane.  So here I am taking my time and slowly merging into the one lane road when someone lets me in.  Here comes these 2 cars who decide to drive all the way until the lane ends and cuts people off.  One of those cars, cuts me off.  I am not talking just cuts me off, I am talking, swerve car into mine without even considering that I am not going to let her in.  Being the defensive and smart driver I am, I slam on the breaks and hold my horn down for several seconds yelling at her.  I said some not so choice words.....  Yesterday was not the day to take advantage of me.  Yesterday was a day where you should have waited your turn and not cut me off.  The best is that she had no idea what she did wrong.  Some days I say, "I should have just let her hit me".  But who wants to deal with the police (not that there is anything wrong with the police), exchanging information, getting the car fixed, and dealing with insurance.  Not me!  People, please just follow the rules of the road.  When you see a "YIELD" sign, that means you are to "YIELD" to on-coming traffic!  When you see that traffic is having to merge into one lane, don't wait till the last second!  Be a polite citizen and merge when everyone else is!  GAH!  {END RANT}

So like my title suggests, TODAY IS A NEW DAY!

Sunday morning I decided to be a good wife and make Andy some breakfast.  In our household breakfast isn't a big thing on the weekends.  Normally we don't eat breakfast and just skip to lunch (because I love to sleep in....)  I decided to make the classic, "Bisquick Coffee Cake" since I haven't made that in quite some time.  Today, I will share with you all this classic recipe that I have enjoyed for years.  My mom use to make it all the time for us when we were younger.

Double-Streusel Coffee Cake


Ingredients

Streusel
  • 2/3 cup Original Bisquick mix
  • 2/3 cup packed brown sugar
  • 1 tsp. ground cinnamon
  • 3 TBSP cold butter or margarine
Coffee Cake
  • 2 cups Original Bisquick mix
  • 1/2 cup milk
  • 2 TBSP granulated sugar
  • 1 1/2 tsp. vanilla
  • 1 egg
Directions
  1. Heat oven to 375 degrees.  Spray bottom and sides of 9 inch round (or square) cake pan with cooking spray. In small bowl, mix 2/3 cup Bisquick mix, the brown sugar and cinnamon.  Cut in butter, using pastry blender (or pulling 2 table knifes through ingredients in opposite directions), until crumbly; set aside.
  2. In medium bowl, stir coffee cake ingredients until blended.  Spread about 1 cup of the batter in the pan.  Sprinkle with about 3/4 cup of the streusel. Drop the remaining batter over top of struesel; spread carefully over streusel. Sprinkle remaining streusel over top.
  3. Bake 20-24 minutes or until golden brown. Let stand 30 minutes before serving (or just eat it warm out of the oven). Serve warm or cool.
Makes 6 servings.

I've only recently passed my driving test and I get more angered with other drivers than I ever thought I would.
