Pasta Fagioli

Pasta Fagioli
How delicious does this recipe look!?!  

All of the credit goes to my mother who made this recipe several weeks ago.  She made a huge pot of this and asked if I would like to take some home for myself.  Like I even needed to be asked!  I would love to give credit where it is deserved, but unfortunately this is a recipe that was floated around facebook and I have no idea who originally came up with it.  I will say that this is a take on Olive Garden's recipe of Pasta Fagioli.  I highly suggest this meal for you and your family to try.  So delicious!!

Ingredients
  • 2lbs. ground beef
  • 1 onion, chopped
  • 3 carrots, chopped
  • 4 stalks of celery, chopped
  • 2 (28 ounce) cans diced tomatos, undrained
  • 1 (16 ounce) can red kidney beans, drained
  • 1 (16 ounce) can white kidney beans, drained
  • 3 (10 ounce) cans beef stock
  • 3 teaspoons oregano
  • 2 teaspoons pepper
  • 5 teaspoons parsley
  • 1 teaspoon Tabasco sauce (optional)
  • 1 (20 ounce) jar spaghetti sauce
  • 8 ounces pasta
Directions
  1. Brown beef in skillet
  2. Drain fat from beef and add to crock pot with all ingredients listed above except for the pasta
  3. Cook on low 7-8 hours of high 4-5 hours
  4. During the last 30 minutes on high or 1 hour on low, add the pasta to the crock pot
